Instructors
Travis Merriman:
Travis has always had a passion for people. This has ensured that his path has travelled straight down Hospitality Lane. As his name may imply, he is known to be very friendly and to truly enjoy working as a hospitality professional. Travis hopes that many others would like to share in his desire to entertain and serve the masses. He has also been a coach for as long as he can remember and his passion to teach is as strong as his passion to entertain.
Travis' work experience had him working in several different bartending scenarios. He has worked at several resaurants, including the Med Grill and The Keg and also several pubs, like The Bird of Paradise, Garricks Head, and The Sticky Wicket. Travis spent 10 years at the Sticky Wicket, the island's largest licensed establishment. In that time, he was exposed to nearly every style of professional bartending, from nightclub work to white tablecloth banquet service. After 8 years of bartending there, he ascended to management where he became a strong leader for the staff and mentored many younger staff members so they could learn the ways of the bar.
Over the last decade, Travis has developed a wealth of experience from which he can draw. If you want to know the tricks of the trade, stop by the school for a chat or sign up today to become certified yourself.
Brendan Brewster:
Brendan Brewster began working in the hospitality industry peeling potatoes in an Irish pub in the Netherlands and quickly fell in love with the characters, accents, stresses and successes, and of course the pretty, pretty bottles that the bar had to offer. His time "working the wood" in Ireland taught him about black gold, and a little more about accents and yet more pretty bottles. An extended tour in Vancouver saw Brendan working as a bar-manager, promoter, doorman and head-barkeep everywhere from grotty basement punk-rock bars to neighbourhood pubs, stadium-adjacent sports bars and boutique restaurants. Bitten hard by the classic cocktail bug a few years back, Brendan has trained with some of Vancouver's pre-eminent bartenders, and continues to take every opportunity to learn more about his craft. He has recently relocated to Vancouver Island to teach bartending and is the co-founder of Stay Busy Bar Service. Brendan is obsessed with flavour affinities, cocktails, the history of alcohol and bartending as a trade. He holds the belief that our culture of food and drink helps people connect over a shared morsel or dram. When Brendan is not bartending or teaching, he has been known to enjoy comic books, paintball and film-noir.
